Customers gaze at our meat case as if they were looking at rare gems and in a way they are. Matthew’s Market is one of only a handful of local retailers authorized to sell Certified Angus Beef, available in beef tenderloin, ribeye and New York strip steak, prime and choice, each hand-cut in house. We also carry a wide array of exceptional smoked meats such as prosciutto di Parma, pancetta, bacon, sopressata, porchetta, chorizo and Matthew’s own Italian sausage; poultry including organic chicken breasts, quail, pheasant, squab and duck; and veal, lamb, pork and venison. All of our meats are fresh and never frozen.

As with all of our products, we’re happy to offer advice on preparation or share recipes. And if you stop by on Saturday, we’ll even cook it for you at our weekly barbecue.

Prosciutto San Daniele

Sweetest, leanest and least salty of all Prosciutti, we love this Italian ham and slice it paper-thin to accentuate its flavor and allow it to literally melt in your mouth. Authentic San Daniele Prosciutto is made in the small town of San Daniele, Italy and boasts an ingredient list of only sea salt and pork. It's dry cured for 400 days using centuries-old secrets, mountain breezes, Adriatic winds and the patience of time. It's heavenly to wrap it around fresh melon or just on its own.

Hint: Leftover proscuitto can be chopped and tossed with peas and crème and added to a pasta like the Rustichella d'Abruzzo.

The Nueske family came to Wisconsin in 1882, bringing with them European skills of Applewood smoking, and dozens of recipes for spicing and curing meat.  The production process has changed over the years and the flavors have gotten better and better.  This smoked bacon has won national acclaim from the NY Times, Chicago Tribune and Cuisine Magazine.  It's lean, it cooks up with little shrinkage and its taste is amazing.  No other bacon compares.

Hint: Wrap a slice of Nueske’s bacon around one of our Prime Beef Tenderloins prior to grilling. The bacon will add a salty sweetness and elevate the flavor from greatness to perfection.
