Cheese

You won’t find a better selection of artisanal cheeses in northeast Florida than at Matthew’s Market. Our offerings encompasses various styles (fresh and aged, soft and firm, natural and washed rind), types of milk (cow, sheep and goat) and origins (France, Italy, Spain and the U.S.) and include Asiago, Camembert, Gorgonzola, Gouda, Manchego, Mascarpone, Parmigiano-Reggiano and Stilton. Whether you’re using cheese as an ingredient or as an accompaniment to wine, we can help you find just what you’re looking for.

Chad's Top Picks, Manager & Owner

We've provided some of Chad's favorite items so you can see what we're currently enjoying.

Fine Cheese Company Charcoal Crackers

We have a range of crackers to accompany our extensive selection of cheeses. This is one of several varieties we carry from the Fine Cheese Company in Bath, England. It is neutral in flavor with a light dusting of salt. It has enough texture to hold a weighty blue. Flavor profiles aside, the best feature of this cracker is that it's nearly black in color and thus is a stylish addition to any cheese plate.

Molinari Dry Salametti Secchi

Molinari and Sons is an Italian market in the North Beach section of San Francisco that started in 1896. They make a wonderful selection of dry cured sausages and other salumi that are distributed to specialty markets around the country. Their Salametti Secchi is a pork sausage with just the right amount of fat to make it chewy yet smooth on the tongue. I love serving thin slices alongside a selection of cheeses.

St. Agur Blue Cheese

We have several blue cheeses at the Market and this one is my favorite. St. Agur is made in the village of Monts du Velay in the mountainous Auvergne region of central France. Made from cow's milk and ripened for at least two months, this is a rich, creamy blue with a medium blue flavor. Mild and not too salty in comparison to more traditional blues, St. Agur appeals to many palates. Perfect spread with fruit or just on some French bread like our baguettes from The French Pantry. Yum!

Hint: Because of its creamy texture, St. Agur melts well on top of grilled meats.

Alta Langa Brunet

This is my favorite goat's milk cheese. Brunet is named after a breed of goat in the Piedmont region of northern Italy where this cheese is produced. Gentle taste, light yellow color, soft and creamy texture, naturally aged with a straw colored surface. Very delicate and quite soft but with the character of goat's milk. This is a crowd pleaser cheese. I've found that first guests use crackers to scoop up the outer creamy texture and as it warms later guests tend to dive in with a spoon.

Hint: This is a great party cheese. It’s sophisticated enough to impress cheese aficionados yet tame enough for beginners to enjoy.
